  • 2 slices smoked salmon The salty, smoky flavor pairs perfectly with the creamy avocado.

Garnish

  • Fresh dill or chopped chives Ideal for a fresh pop of flavor and color.
  • Optional: red pepper flakes Add if you like a spicy kick!

Instructions

Preparation of Avocado

  • In a medium bowl, mash the ripe avocado to your desired consistency. If you enjoy a chunky spread, leave some pieces intact. Add the lemon juice, a pinch of salt, and freshly cracked black pepper. Mix well until combined, then set aside.

Toast the Bread

  • While preparing the avocado mixture, toast your whole-grain or sourdough bread until it’s golden and crisp. If desired, brush the bread with a little olive oil or butter during toasting for an extra flavor boost.

Poach the Egg

  • In a saucepan, bring water to a gentle simmer. You can add a splash of vinegar to help the egg whites coagulate. Swirl the water gently with a spoon, then carefully drop in the crack egg. Allow it to poach for about 3–4 minutes until the whites are set, yet the yolk remains runny. Using a slotted spoon, remove the egg and let it drain.

Assemble the Toast

  • Take your crispy toast and spread a generous layer of the mashed avocado over it. Lay down the smoked salmon slices on top of the avocado.

Add the Poached Egg

  • Gently place the poached egg on top of the salmon, being careful not to break the yolk just yet.

Garnish and Serve

  • Sprinkle with fresh dill or chopped chives for added flavor. If you enjoy some spice, sprinkle a pinch of red pepper flakes on top. Finally, add a touch more salt and pepper to taste.

Enjoy

  • This dish is best served right away, allowing you to savor every delicious bite.

Notes

Always use the freshest avocado and eggs for the best flavor and texture. If poaching seems daunting, try a soft-boiled egg as an easier alternative. Consider adding greens or radish slices for added crunch. Experiment with toppings like feta cheese or lemon-infused olive oil.
