Instructions

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a skillet over medium heat, brown the ground beef, then add the chopped onion and minced garlic, stirring until fragrant.
  • Mix in the taco seasoning with 1⁄4 cup of water and simmer until the mixture thickens slightly, about 5-7 minutes.
  • Spread a thin layer of salsa across the bottom of a 9×13-inch casserole dish.
  • Place two flour tortillas over the salsa, allowing some overhang.
  • Spread half of the refried beans over the tortillas, followed by half of the beef mixture, and sprinkle cheddar and Monterey Jack cheese.
  • Repeat the layers with another set of tortillas, remaining beans, beef mixture, and cheeses.
  • Top with the last two tortillas, then spread the remaining salsa and cheese on top.
  • Cover the casserole with foil and bake for 20 minutes, then remove the foil and bake for an additional 10 minutes until golden and bubbly.
  • Let cool for a few minutes, then serve with sour cream and cilantro.

Notes

You can prepare the beef mixture the day before. Customize flavors with additional spices, and add vegetables for extra nutrition.
