Ingredients

For the Quesadillas

  • 3 cups spinach, roughly chopped This vibrant green adds nutrients and a burst of color.

Instructions

Preparation

  • Preheat your oven to 400°F (200°C).
  • Place the sliced mushrooms in a bowl and microwave them for 2 1/2 to 3 minutes to soften. Once done, drain them well to remove excess moisture.
  • If using, brush one side of each tortilla lightly with olive oil.
  • Arrange the tortillas, oiled side down, on a baking sheet.
  • Sprinkle half of the mozzarella and cheddar on one side of each tortilla.
  • Evenly layer the spinach and mushrooms over the cheese.
  • Add the remaining cheese on top of the veggies.
  • Carefully fold the tortillas in half over the fillings.

Cooking

  • Place the baking sheet in the oven and bake for 6 minutes.
  • After that, flip the quesadillas and bake for another 6-7 minutes until they are crispy and golden.

Notes

If you’re looking to spice things up, consider adding some finely chopped jalapeños or red pepper flakes to the filling for extra heat. For a more robust flavor, sauté the spinach and mushrooms in olive oil and garlic before assembling.
