  • 1 lb carrots, peeled and cut into sticks Can be left whole if thin.
  • 1.5 tablespoons olive oil

  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey or maple syrup Use maple syrup for a vegan option.
  • 1 teaspoon fresh thyme leaves (optional)

Instructions

Preparation

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Toss the peeled and cut carrots in a large bowl with the olive oil, ensuring they are evenly coated. Season with salt and black pepper to taste.

Roasting

  • Spread the carrots on the lined baking sheet in a single layer.
  • Roast the carrots for 20–25 minutes, flipping them halfway through cooking time.
  • While the carrots are roasting, mix the balsamic vinegar and honey (or maple syrup) in a small bowl.
  • During the last 5 minutes of roasting, drizzle the balsamic glaze over the carrots and toss to coat.
  • Sprinkle fresh thyme over the carrots before serving.

Notes

Prep ahead by storing peeled and cut carrots in the fridge for up to 3 days. Experiment with different vegetables or flavorings to customize the dish.
