Preparation

  • Begin by bringing a pot of salted water to a boil. Add the thinly sliced potatoes and parboil them for about 4 minutes until they are slightly tender. Drain and set aside.

Cooking Beef

  • Heat 1 tablespoon of oil in a wok or large skillet over high heat. Once hot, add the sliced beef and sear until it’s browned on the outside but still tender inside. Remove the beef from the wok and set it aside.

Sautéing Vegetables

  • In the same pan, add the remaining oil. Toss in the sliced onion, minced garlic, and grated ginger. Sauté for a couple of minutes until fragrant.
  • Add the blanched potato slices to the wok and cook for about 5 to 7 minutes, stirring frequently, until they become golden brown and crisp.

Bringing it Together

  • Return the seared beef to the pan. Pour in the soy sauce, oyster sauce, hoisin sauce, and brown sugar. Stir well to combine.
  • Then, add the cornstarch slurry, allowing it to thicken the sauce, giving it a perfect glossy finish.
