Ingredients

For the Salad

  • 2 large golden beets, peeled & cubed Adds sweetness and bright color.
  • 2 large red beets, peeled & cubed Provides earthiness and lovely hue.
  • 1 ball fresh burrata Rich, creamy cheese that elevates the salad.
  • 2 tbsp extra virgin olive oil Adds richness.
  • 1/4 tsp salt Enhances the flavor.
  • cracked black pepper Adds spice.
  • 3 tbsp toasted pine nuts Provides texture and nutty flavor.
  • 1 handful fresh basil leaves For aromatic freshness.
  • Fresh thyme sprigs (optional) For enhancing fragrance.
  • 3 tbsp balsamic vinegar Adds sweet-and-sour aspect.
  • 1 tbsp honey Natural sweetness.
  • 1 pinch sea salt Final flavor enhancement.

Instructions

Preparation

  • Preheat your oven to 200°C (400°F).
  • Toss the cubed golden and red beets separately in olive oil, salt, and cracked black pepper.
  • Spread them evenly on baking sheets and roast for about 25–30 minutes until fork-tender.
  • Once roasted, let them cool slightly.

Making the Balsamic Glaze

  • In a small saucepan over medium heat, combine the balsamic vinegar and honey.
  • Allow the mixture to simmer until reduced by half and thickened to a syrup-like consistency.
  • Stir in a pinch of sea salt before letting it cool.

Assembly

  • On a large shallow plate, artfully combine both varieties of roasted beets.
  • Gently place the ball of burrata in the center.

Garnishing

  • Scatter the toasted pine nuts and fresh basil leaves over the beets and burrata.
  • Drizzle everything with the balsamic glaze and a splash of olive oil.
  • If using thyme, add the sprigs at this stage.

Serving

  • Serve immediately while the beets are still slightly warm or at room temperature.

Notes

Use a mix of beet colors for a visually appealing dish. Wear gloves when cutting beets to avoid staining. Prepare the balsamic glaze in advance for quick assembly. Substitute hazelnuts or walnuts for pine nuts if desired.
