Ingredients

For the Cake

  • 2.5 cups all-purpose flour the foundation for a tender crumb.
  • 1.5 cups granulated sugar adds sweetness and moisture.
  • 3/4 cup unsweetened cocoa powder for that intense chocolate flavor.
  • 1.5 teaspoons baking powder helps the cake rise perfectly.
  • 1.5 teaspoons baking soda ensures a light and fluffy texture.
  • 1/2 teaspoon salt enhances all the flavors in the cake.
  • 1 cup buttermilk adds richness and tenderness.
  • 1/2 cup vegetable oil contributes to a moist texture.
  • 2 large eggs bind the ingredients together while adding richness.
  • 1 teaspoon vanilla extract for a fragrant note.
  • 1 cup brewed strong coffee, cooled intensifies the chocolate flavor.
  • 1 tablespoon black food coloring (optional) for a dramatic color boost.

For the Cream Cheese Frosting

  • 8 oz cream cheese, softened creates a rich and creamy layer.
  • 1/2 cup unsalted butter, softened adds smoothness and flavor.
  • 4 cups powdered sugar for sweetness and texture.
  • 1 teaspoon vanilla extract to round out the flavors.

Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  • In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  • In another bowl, combine the buttermilk, vegetable oil, eggs, vanilla extract, and brewed coffee; mix until well combined.
  • Gradually add the wet ingredients to the dry ingredients; mix until just combined. Stir in the black food coloring if desired.

Baking

  • Divide the batter evenly between the prepared cake pans and bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  • Allow the cakes to cool in the pans for about 10 minutes, then transfer them to a wire rack to cool completely.

Make the Frosting

  • Beat the softened cream cheese and butter in a large bowl until creamy and smooth.
  • Gradually incorporate the powdered sugar and continue to beat until the frosting is fluffy.
  • Mix in the vanilla extract.

Assembling the Cake

  • Place one cake layer on a serving plate and spread a generous layer of cream cheese frosting on top.
  • Add the second cake layer on top and frost the entire cake with the remaining cream cheese frosting.
  • Decorate as desired with chocolate shavings, fresh berries, or cocoa powder.

Notes

For a more intense chocolate flavor, use high-quality cocoa powder. Consider chilling your cream cheese and butter before mixing for a smoother frosting. Layer fruit preserves between cake layers for added flavor!
