Ingredients

For the Cake

  • 3/4 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 4 large eggs Should be at room temperature
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • Red food coloring (optional) For extra flair
  • Powdered sugar (for dusting)

For the Filling

  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and prepare a 10x15-inch jelly roll pan lined with parchment paper.
  • In a medium bowl, sift together the flour, cocoa powder, baking powder, and salt.
  • In a separate bowl, whisk together the eggs and granulated sugar until thick and pale, then incorporate the vanilla extract.
  • Gently fold the dry ingredients into the egg mixture, adding red food coloring to reach desired shade.

Baking

  • Pour the batter into the prepared pan and bake for 12-15 minutes until the cake springs back when touched.
  • While the cake bakes, sprinkle a clean kitchen towel with powdered sugar.
  • Invert the baked cake onto the prepared towel, carefully peeling off the parchment.
  • Roll the cake with the towel from the short end and let it cool completely in this position.

Filling and Assembly

  • In a bowl, beat the softened cream cheese and butter until smooth, then gradually add powdered sugar and vanilla extract.
  • Once cooled, unroll the cake and spread the cream cheese filling evenly over the surface.
  • Roll the cake back up without the towel, wrap in plastic wrap, and refrigerate for at least 1 hour.

Serving

  • Dust the roll with powdered sugar before slicing into generous pieces and serve.

Notes

Wrap tightly in plastic wrap and refrigerate for up to 3 days. Can freeze unfilled cake roll. For variations, consider different flavor extracts in the filling.
