Instructions

Preparation

  • Preheat your oven to 400°F (200°C).
  • Slice the baguette into ½-inch rounds, ensuring thin slices for perfect crispiness.
  • Arrange the slices on a baking sheet, drizzle generously with olive oil, and sprinkle with a pinch of salt.
  • Bake for 5 minutes until golden, then flip the slices and bake again for 3–5 minutes or until they reach a delightful crisp.

Cooking

  • While the bread is toasting, take a small pan and add half of the blackberries along with the balsamic vinegar and rosemary. Allow this to simmer over medium heat for about 5 minutes, gently mashing the berries to release their juices.
  • Once thickened, remove from heat, discard the rosemary, and mix in the remaining whole blackberries.

Assembly

  • In a mixing bowl, combine the goat cheese, heavy cream, lemon zest, salt, and pepper. Whisk until smooth and creamy.
  • Spread a generous amount of the goat cheese mixture on your toasted baguette slices.
  • Top each with a spoonful of the blackberry mix and garnish with a small piece of rosemary for a touch of elegance.

Notes

For extra flavor, roast baguette slices with a clove of garlic brushed with olive oil. You can also experiment with honey mixed into the goat cheese for added sweetness, or try other fruit toppings like figs or strawberries.
