  • 2 slices rustic sourdough Thick, crusty, and perfect for toasting.
  • 1 to 1.5 cups melty cheese Choose from Havarti, mozzarella, Swiss, Monterey Jack, or sharp white cheddar.
  • 1 handful fresh spinach or peppery arugula Adds freshness and cut through the richness.
  • 0.5 cup fresh or frozen blueberries Sweet and tangy, the star ingredient.
  • 1 tablespoon balsamic vinegar Adds richness and acidity to balance sweetness.
  • 1.5 tablespoons brown sugar Enhances the natural sweetness of the blueberries.
  • to taste freshly ground black pepper Offers a hint of spice.

Instructions

Preparation

  • In a small saucepan over medium heat, combine the blueberries, balsamic vinegar, and brown sugar. Stir occasionally, mashing the berries gently with a spoon or fork to release their juices. Simmer for about 5 minutes until slightly thickened.
  • Remove the saucepan from heat and strain the mixture through a fine mesh strainer to remove the skins. Set aside the thickened blueberry mixture as a flavorful spread for your sandwich.

Assembly and Cooking

  • Spread the blueberry mixture onto one slice of rustic sourdough bread. Layer with half of the melty cheese, followed by a handful of fresh spinach or arugula. Top with the remaining cheese and sprinkle with freshly ground black pepper before placing the second slice of bread on top.
  • Heat a skillet over medium heat and place the assembled sandwich in the pan. Cook for 3–4 minutes on each side, pressing down gently with a spatula until both sides are golden brown and crispy, and the cheese is melted perfectly.
  • Remove the sandwich from the pan and let it rest for a minute before slicing. Serve warm.

Notes

Feel free to experiment with different cheeses and add herbs such as fresh basil or mint for an exciting twist. For a vegan version, use plant-based cheese and butter. Can also add crushed red pepper flakes for some heat.
