Instructions

Preparation

  • In a mixing bowl, beat together cream cheese, caster sugar, and vanilla until the mixture is smooth and creamy. Gently fold in the blueberries, ensuring they remain whole.
  • Slice the brioche loaf into 8 slices. Use 4 slices to make sandwiches by spreading the blueberry cream cheese filling generously between them.

Custard Mixture

  • In another bowl, whisk together the egg, milk, cream, and cinnamon until fully blended.

Cooking

  • Dip each sandwich into the custard mixture, allowing it to soak for 20 seconds on each side.
  • Melt butter in a pan over medium heat. Fry each sandwich for 3-4 minutes on each side until they are golden brown.
