Ingredients

For the crust

  • 1 cup graham cracker crumbs
  • 2 tablespoons granulated sugar
  • 1/4 cup unsalted butter, melted

For the cheesecake filling

  • 16 oz cream cheese, softened Use room temperature for best results.
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 tablespoon zest of an orange
  • 1/4 cup fresh orange juice
  • 1 cup fresh blueberries

Instructions

Preparation

  • Preheat your oven to 325°F (163°C) and prepare a 9x9-inch baking pan by lining it with parchment paper.
  • In a medium bowl, combine graham cracker crumbs, two tablespoons of sugar, and melted butter. Press the mixture firmly into the bottom of the prepared pan to create a solid crust. Bake for 10 minutes and then set aside to cool.

Making the Filling

  • In a large mixing bowl, beat the cream cheese and half a cup of sugar together until smooth and creamy. Mix in the vanilla extract, eggs, orange zest, and fresh orange juice until well combined.
  • Gently fold in the fresh blueberries, being careful not to break them.

Baking

  • Pour the cheesecake mixture over the cooled crust, spreading it evenly. Bake in the preheated oven for 25-30 minutes, or until the edges are set and the center has a slight jiggle.
  • Let the cheesecake cool at room temperature, then refrigerate for at least two hours to set completely.
  • Once chilled, lift the cheesecake out of the pan using the parchment paper overhang. Cut into bite-sized squares.
