Pastry

  • 1 sheet puff pastry (thawed but chilled) Golden, flaky layers encasing the filling.
  • 1 large egg yolk For egg wash.
  • 1 tsp water For egg wash.

Instructions

Preparation

  • Begin by placing the diced sweet potatoes in a pot of boiling salted water. Let them simmer until tender, about 15–20 minutes.
  • Once cooked, drain and return them to the pot. Mash with unsalted butter, a pinch of cinnamon, salt, and pepper until smooth. Set aside to cool.

Dough Preparation

  • On a lightly floured surface, roll out the chilled puff pastry into a large rectangle, about 1/8-inch thick.
  • Make two diagonal cuts on either side of the center, forming angled strips for braiding.

Filling Assembly

  • Spoon the creamy sweet potato mash down the center of the prepared pastry.
  • Crumble the feta cheese over the sweet potato and sprinkle the pistachio bits on top.

Braid Assembly

  • Carefully fold the strips of pastry over the filling, alternating sides to create a braid effect.
  • Seal the ends gently to ensure the filling is secure.

Baking

  • Preheat your oven to 400°F (200°C). Brush the braided pastry with the egg wash to achieve a golden sheen.
  • Sprinkle crushed pistachios on top and bake for 25–30 minutes until golden brown.

Finishing Touches

  • Once removed from the oven, let it rest for about 10 minutes before slicing.
  • Drizzle with maple syrup or honey if desired before serving.

Notes

To avoid a tough crust, keep the puff pastry chilled and do not overwork during assembly. Ensure the filling is adequately seasoned.
