Instructions

Preparation

  • In a medium-sized bowl, combine the halved cherry tomatoes, chopped basil, minced garlic, balsamic vinegar, salt, and black pepper. Gently mix the ingredients and refrigerate.

Cooking the Spaghetti

  • Bring a large pot of salted water to a boil. Add the spaghetti and cook until al dente, about 8 to 10 minutes. Reserve 1 cup of pasta water, then drain and set aside.

Cooking the Chicken

  • In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced chicken and season with Italian seasoning and black pepper. Cook for 5 to 7 minutes or until cooked through, then set aside.

Combining Ingredients

  • In the same skillet, add the remaining tablespoon of olive oil and the chilled tomato mixture. Warm for 1 minute, then add the cooked chicken and drained spaghetti. Toss to combine, adding reserved pasta water if needed for consistency.

Serving

  • Plate the pasta and garnish with grated Parmesan. Drizzle with balsamic glaze if desired. Serve warm with a side salad or bread.

Notes

For added depth, consider marinating the chicken in olive oil and balsamic vinegar for an hour before cooking. You can also substitute chicken with shrimp or grilled vegetables for a vegetarian version. Store leftovers in the refrigerator for up to 3 days.
