  • 1 tbsp olive oil Plus more for drizzling, cold-pressed and fragrant.
  • 4 plums roasted plums Sweet and caramelized, juicy flesh provides a delightful contrast.
  • 1/4 cup pistachios Crunchy and nutty, offering vibrant color and a satisfying bite.
  • 2 tbsp fresh thyme Aromatic and herbaceous, enhancing the savory notes of the dish.
  • 1 tbsp balsamic vinegar Optional for variation, adds a sweet and tangy drizzle.

Instructions

Preparation

  • Begin by preheating your oven to 400°F (200°C).
  • Slice the plums in half, removing the pits, and drizzle them with olive oil.
  • Place them cut side up on a baking sheet and roast for about 20 minutes until tender, caramelizing their edges.
  • While the plums roast, take the burrata out of the fridge, gently open it, and drizzle with olive oil.

Assembly

  • Once the plums are caramelized, remove them from the oven and arrange them artfully around the burrata.
  • Chop the pistachios coarsely and sprinkle them over the burrata and plums.
  • Finish with fresh thyme leaves and drizzle with balsamic vinegar if desired.

Notes

For a lighter alternative, replace burrata with vegan cheese. You can also use other seasonal fruits like peaches or figs. Serve with warm crusty bread or an arugula salad.
