Instructions

Prepare the Caramel Sauce

  • In a medium saucepan over medium heat, pour in the granulated sugar. Stir constantly until the sugar melts and turns a deep amber color. Add the unsalted butter, stirring until fully melted. Remove from heat and slowly pour in the heavy cream while stirring continuously until smooth and glossy. Stir in the salt and allow to cool slightly.

Prepare the Cheesecake Mousse

  • In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add the powdered sugar, blending until fully combined. In a separate bowl, whip 1 cup of heavy cream until stiff peaks form and fold into the cream cheese mixture.
  • Divide the mixture in half: mix vanilla extract into one half and coffee with melted chocolate into the other half.

Assemble the Mousse

  • In serving glasses or bowls, layer the vanilla cheesecake mousse followed by the chocolate coffee cheesecake mousse. Repeat until the glasses are filled. Drizzle with cooled caramel sauce.
