Preparation

  • Begin by slicing the ripe pears and placing them in a bowl. Drizzle the slices with fresh lemon juice and honey, tossing gently to coat each piece.
  • In a dry non-stick pan, heat over medium heat. Add the chopped walnuts and toss frequently for 3–4 minutes, or until they’re fragrant and slightly golden.
  • Using the same pan, melt the butter over a medium flame. Add the honey-coated pears and cook for about 5–7 minutes, turning occasionally until caramelized.

Assembly

  • Arrange the fresh rocket (arugula) leaves onto serving plates.
  • Carefully place the warm, caramelized pears on top of the greens, then sprinkle with crumbled blue cheese and toasted walnuts.

Serving

  • Serve immediately while the pears are warm, optionally drizzling with balsamic glaze or more honey.

Notes

For added flavor, consider adding figs or pomegranate seeds. Grilled chicken or quinoa can make it a complete meal. Almond butter can be substituted for less calories, and feta can replace blue cheese for a milder flavor.
