Instructions

Preparation

  • Preheat oven to 175°C (350°F) and grease and line an 8-inch round or square baking pan with parchment paper.
  • In a large bowl, mix the all-purpose flour, rolled oats, baking powder, baking soda, salt, cinnamon, and nutmeg. Whisk until well blended.
  • In another bowl, beat the eggs with brown and granulated sugars until light and fluffy. Add the vegetable oil, Greek yogurt, and vanilla extract; whisk until smooth.

Mixing

  • Pour the wet ingredients into the dry mixture and stir gently, being careful not to overmix.
  • Fold in the finely grated carrots, raisins, and chopped nuts if using.

Baking

  • Pour the batter into the prepared pan and bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.
