Instructions

Preparation

  • Preheat your oven to 375°F (190°C).
  • Grease a baking dish with olive oil to prevent sticking.
  • Boil the cheese tortellini in salted water for 2 minutes less than the package recommends. Drain and set aside.
  • In a large mixing bowl, combine the drained tortellini, pizza sauce, Italian seasoning, garlic powder, and half of the shredded mozzarella cheese. Toss gently until well coated.
  • Pour the tortellini mixture into the prepared baking dish, spreading it evenly.

Baking

  • Sprinkle the remaining mozzarella cheese, Parmesan cheese, and mini pepperoni evenly over the top.
  • Place the casserole in the oven and bake uncovered for 20–25 minutes, until golden and bubbly.

Serving

  • Remove from the oven and optionally sprinkle with red pepper flakes and chopped parsley before serving.

Notes

For variations, consider adding vegetables like spinach, bell peppers, or mushrooms. You can also mix different cheeses for a twist in flavor. To achieve a crunchier topping, broil for an additional 2-3 minutes after baking.
