Ingredients

For the Chicken

  • 2 large boneless, skinless chicken breasts (butterflied & pounded thin)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp Italian seasoning
  • 2 tbsp olive oil

For the Mushroom Filling

  • 2 tbsp unsalted butter For sautéing
  • 3 cloves garlic, minced
  • 2 cups cremini or baby bella mushrooms, sliced Juicy and earthy
  • 1/4 tsp salt
  • 1/4 tsp thyme
  • 3/4 cup shredded mozzarella cheese Melty and creamy
  • 1/4 cup grated Parmesan cheese

For the Sauce

  • 2 tbsp butter
  • 1 tbsp flour
  • 1 cup chicken broth
  • 1/2 cup heavy cream Rich and luscious
  • 1/2 cup shredded mozzarella For an extra cheesy finish

For Garnish

  • Fresh parsley chopped For garnish, adding a pop of color

Instructions

Preparation

  • Start by butterflying each chicken breast, then pound them until they reach about 1/2 inch thickness. Season both sides with salt, black pepper, and Italian seasoning.

Sautéing

  • In a skillet over medium heat, melt 2 tablespoons of butter. Add the minced garlic, cooking for about 30 seconds until fragrant. Toss in the sliced mushrooms, adding salt and thyme. Sauté until the mushrooms are browned and tender, about 5-6 minutes. Allow to cool slightly.

Assembling

  • Lay out each seasoned chicken breast flat. Spoon a generous amount of the mushroom mixture onto each piece and sprinkle with mozzarella and Parmesan cheese. Roll the chicken tightly and secure with toothpicks.

Cooking

  • In a skillet over medium-high heat, heat the olive oil. Place the chicken rolls seam-side down and sear until golden brown on all sides, about 8-10 minutes. Transfer to a plate.

Making the Sauce

  • In the same skillet, melt 2 tablespoons of butter and whisk in the flour to form a roux. Gradually stir in the chicken broth and heavy cream, cooking until thickened. Add remaining mozzarella cheese and season with salt and pepper.

Baking

  • Preheat your oven to 375°F (190°C). Arrange the chicken rolls in a baking dish and pour the sauce over the top. Bake uncovered for 20-25 minutes until cooked through and golden.

Serving

  • Garnish with chopped parsley before serving.

Notes

Don’t skimp on seasoning and let the chicken rolls rest for a few minutes post-baking for juiciness. You can also experiment with cheese types and add vegetables such as spinach for added nutrition.
