Instructions

Preparation

  • In a large skillet, heat the olive oil over medium heat. Use the oil to coat the pan well.
  • Add the diced potatoes to the skillet. Cook for about 10–12 minutes, stirring occasionally, until golden and tender. Remove and set aside.
  • In the same skillet, add ground beef and diced onion. Cook until the beef is browned and the onions are soft, about 6–8 minutes.
  • Drain any excess fat from the ground beef mixture, then stir in garlic powder, smoked paprika, salt, and pepper. Mix well.
  • Add the cooked potatoes back into the skillet. Stir everything together and let cook for another 3–4 minutes.
  • Sprinkle shredded cheese across the skillet, cover with a lid, lower the heat, and let it sit for 2–3 minutes until the cheese melts.
  • Sprinkle with fresh chopped parsley if desired, and serve hot.

Notes

Feel free to experiment with cheese types, like pepper jack for a kick. You can also add bell peppers or diced carrots for extra color and nutrition.
