Ingredients

For the Stuffing

For the Chicken

  • 4 pieces boneless, skinless chicken thighs The star of the show, tender and juicy.
  • 1 cup panko breadcrumbs For that irresistible crunch on the outside.
  • 1/2 cup grated Parmesan cheese Rich in flavor and perfect for that cheesy topping.
  • 1 tsp Italian seasoning The aromatic blend brings a touch of the Mediterranean.
  • 1/2 tsp paprika A dash of color and a hint of sweetness.
  • 2 tbsp butter, melted Ensures the breadcrumbs get that golden finish.

Instructions

Preparation

  • In a bowl, mix the softened cream cheese, shredded mozzarella, chopped parsley, garlic powder, onion powder, salt, and pepper until smooth and well combined.
  • Carefully slice a pocket into each chicken thigh, being cautious not to cut all the way through.
  • Generously stuff each thigh with the cream cheese mixture. Use toothpicks to secure if necessary.
  • In a separate bowl, whisk together the eggs and milk until well combined.
  • In another bowl, mix the panko breadcrumbs, grated Parmesan, Italian seasoning, paprika, and melted butter.

Cooking

  • Dip each stuffed chicken piece into the egg wash, allowing excess to drip off before coating in the breadcrumb mixture.
  • Place the stuffed chicken in a greased baking dish.
  • Bake at 375°F (190°C) for 25–30 minutes, or until golden brown and cooked through.
  • Garnish with extra chopped parsley and serve hot.

Notes

To elevate your dish, add chopped sun-dried tomatoes to the filling, use fresh herbs in place of dried, or sprinkle extra Parmesan on top before baking. Experiment with spices or additional vegetables for more flavor.
