Instructions

Preparation

  • Preheat your oven to 400°F (200°C) for roasting the cherry tomatoes.
  • In a mixing bowl, toss the halved cherry tomatoes with olive oil, minced garlic, salt, and pepper.
  • Spread the mixture on a lined baking sheet and roast for about 20 minutes until soft and caramelized.
  • Slice chicken breasts in half horizontally, season with salt, smoked paprika, and Italian seasoning.

Cooking

  • In a large skillet, heat olive oil over medium heat and cook the chicken for about 5 minutes per side until fully cooked. Remove and slice into strips.
  • In the same skillet, add lemon slices, remaining minced garlic, and butter. Cook gently for a couple of minutes until butter bubbles slightly, then remove from heat.
  • Meanwhile, boil spaghetti according to package directions until al dente, drain, and add directly to the skillet with lemon butter garlic sauce.
  • Toss spaghetti until thoroughly coated and remove lemon slices.

Plating

  • Plate the pasta topped with sliced chicken and roasted tomatoes.
  • Tear Burrata cheese over the top and sprinkle generously with fresh basil and toasted pine nuts.
  • Serve immediately, allowing the warm pasta to melt the cheese slightly for creaminess.

Notes

For extra flavor, consider marinating the chicken in olive oil, garlic, and spices for an hour before cooking. You can also add other vegetables like spinach or arugula and spices like red pepper flakes.
