Ingredients

Pasta and Chicken

Vegetables and Toppings

  • 1 1/2 cups 1 1/2 cups cherry tomatoes, halved Juicy bursts of sweetness.

Instructions

Cooking the Pasta

  • Bring a large pot of salted water to a boil and add the spaghetti. Cook until al dente, then drain and reserve 1/2 cup of the pasta water.

Searing the Chicken

  • Heat 2 tablespoons of olive oil in a large pan over medium heat. Add sliced chicken, garlic, smoked paprika, oregano, salt, and black pepper. Sauté for 5-6 minutes per side until golden brown and cooked through.

Roasting the Tomatoes

  • In the same pan, add cherry tomatoes and balsamic vinegar. Cook over medium heat for about 5 minutes until the tomatoes soften and burst.

Combining Ingredients

  • Return the cooked spaghetti to the pan with the tomatoes. Toss together, adding reserved pasta water for creaminess. Add the seared chicken and mix until fully coated.

Finishing Touches

  • Transfer the pasta to a serving dish, place the burrata in the center, drizzle with extra virgin olive oil, and sprinkle with pine nuts, red pepper flakes, and basil.

Serving

  • Gently break open the burrata to allow its creamy interior to mix with the pasta. Serve warm.

Notes

Ensure the pasta is cooked slightly firm to avoid overcooking when mixed. Use additional red pepper flakes for heat if desired. Leftover pasta can be stored in an airtight container for up to three days.
