Ingredients

Pistachio Filling

  • 1 cup roasted pistachios (unsalted) for a nutty flavor.
  • 2 tbsp powdered sugar to sweeten just right.
  • 2 tbsp honey for a touch of natural sweetness.
  • 1/4 tsp cardamom adding a hint of warmth.
  • 2-3 tbsp heavy cream for a creamy texture.

Phyllo Dough

  • 10 sheets phyllo dough, thawed the flaky base.
  • 1/2 cup unsalted butter, melted for brushing.

Chocolate Coating

  • 1/2 cup dark chocolate chips or chopped chocolate the rich dip.
  • 1 tsp coconut oil for that smooth finish.
  • to taste Crushed pistachios for garnish.

Instructions

Preparation

  • Pulse the roasted pistachios in a food processor with powdered sugar and cardamom until fine.
  • Add in the honey and heavy cream, one tablespoon at a time, until you achieve a thick, cohesive paste.

Layer the Phyllo Dough

  • Lay a single sheet of phyllo dough on a clean surface.
  • Brush the top with melted butter, and layer another sheet on top.
  • Repeat this step with two additional sheets, giving you a total of four layers.
  • Cut the phyllo stack into long strips, about three inches wide.

Shape the Bites

  • Place a teaspoon of the pistachio filling at one end of each phyllo strip.
  • Fold the dough into triangles, brushing each fold with butter to ensure they stick.
  • Place them on a lined baking sheet.

Bake to Perfection

  • Preheat your oven to 350°F (175°C) and bake the phyllo bites for 18-20 minutes or until they are golden brown and crisp.
  • Allow them to cool completely on a wire rack.

Add the Chocolate Coating

  • In a microwave or double boiler, melt the dark chocolate with coconut oil until smooth and glossy.
  • Dip the corners or half of each baked triangle into the melted chocolate.
  • Sprinkle with crushed pistachios and set on parchment paper to firm up.

Notes

Keep phyllo dough covered with a damp cloth to prevent it from drying out. You can also experiment with adding orange or rose water for an exotic twist. These phyllo bites can be frozen before baking for later use.
