Instructions

Preparation

  • In a large bowl, cream the softened butter, granulated sugar, and orange zest together until light and fluffy.
  • Add in the pure vanilla extract, mixing it in gently.
  • Gradually sift in the all-purpose flour along with the salt, stirring until a soft dough begins to form.
  • Fold in the finely chopped dried cranberries carefully to ensure even distribution.
  • Divide the dough into two logs, approximately 5 cm wide, wrap in plastic wrap and chill for at least 2 hours.

Baking

  • Preheat your oven to 160°C (325°F) and line your baking sheets with parchment paper.
  • Once chilled, slice the logs into rounds about 1/2 cm thick and roll the edges in extra sugar if desired.
  • Arrange the cookies on the baking sheet with sufficient space between each.
  • Bake for 12 to 15 minutes, or until the edges just start to turn golden.
  • Cool the cookies on the tray for 5 minutes before transferring them to wire racks to cool completely.

Notes

Ensure butter is at room temperature and do not overmix the dough to prevent tough cookies. Chilling dough is essential for perfectly shaped coins.
