Instructions

Marinate the Chicken

  • In a mixing bowl, whisk together the coconut milk, lime juice, lime zest, minced garlic, olive oil, salt, and black pepper.
  • Add the chicken pieces, making sure they are well-coated in the marinade.
  • Cover the bowl and let it chill in the refrigerator for at least 30 minutes.

Cook the Rice

  • In a medium pot, bring the chicken broth or water to a boil.
  • Once boiling, stir in the jasmine rice, cover with a lid, lower the heat, and let it simmer for 15 minutes.
  • Once done, remove from heat and let it sit covered for an additional 5 minutes.

Sear the Chicken

  • Heat a skillet over medium heat.
  • Remove the marinated chicken from the bowl, reserving the marinade for later.
  • Place the chicken in the skillet and cook for approximately 6-7 minutes per side until browned and cooked through.

Make the Sauce

  • Pour the reserved marinade into the same skillet and let it simmer for 3-4 minutes, stirring occasionally until it thickens slightly.

Serve

  • Spoon the jasmine rice onto a dish, lay the seared chicken on top, and drizzle with the creamy sauce.
  • Garnish with chopped cilantro and lime wedges if desired. Serve immediately.
