For the Crust

Instructions

Preparation

  • In a small bowl, dissolve the instant coffee powder in hot water. Set aside to cool.
  • In a mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract together until stiff peaks form. Cover and refrigerate.
  • In a microwave-safe bowl, combine the dark chocolate, milk chocolate, and butter. Melt in short bursts, stirring until smooth. Allow to cool slightly.
  • Combine chocolate cookie crumbs with melted butter in a bowl. Press firmly into the bottom of a 9-inch springform pan.

Assembly

  • Fold the cooled coffee mixture into the whipped cream until incorporated.
  • Fold in the melted chocolate mixture until evenly blended.
  • Pour the coffee mousse mixture over the prepared crust, spreading it evenly.

Chilling

  • Refrigerate the cake for at least 4 hours or overnight to set.
