Instructions

Make the Dough

  • In a mixing bowl, combine the cake flour, baking powder, salt, and sugar. Mix well to ensure even distribution.
  • Slowly add in the milk and melted butter. Stir until a soft dough forms without overworking it.

Shape & Fry

  • Flour your hands and roll small amounts of dough into balls about the size of a tablespoon.
  • Heat oil in a deep pot or frying pan over medium heat. Ensure there's enough oil to submerge the dough balls.
  • Once the oil is hot, carefully add the dough balls, frying only a few at a time. Fry until golden brown, about 3-5 minutes per batch.
  • Remove the puffs with a slotted spoon and drain on paper towels. Let them cool slightly.

Fill

  • In a bowl, mix condensed milk and custard until creamy.
  • Using a piping bag, pierce each puff and fill generously with the creamy mixture.

Coat

  • While still warm, roll the filled doughnuts in cinnamon sugar until fully coated.

Notes

Allow the oil to reach the right temperature for a crunchy exterior. Consider adding vanilla extract for a richer filling. Drain well after frying to avoid greasiness.
