Ingredients

Instructions

Preparation

  • Preheat your oven to 325°F (165°C) and prepare a 9-inch springform pan by greasing it lightly.
  • In a medium bowl, mix together the crushed chocolate sandwich cookies, sugar, and melted butter until well combined. Press this mixture firmly into the bottom of the prepared pan to create a solid crust.

Filling

  • In a large bowl, beat the softened cream cheese and sugar together until smooth and creamy.
  • Add the sour cream and mix well before incorporating the eggs one at a time, ensuring each egg is fully mixed in before adding the next.
  • Stir in the vanilla extract, crushed cookies, and mini chocolate chips until evenly distributed.

Baking

  • Pour the cheesecake mixture over the cookie crust in the springform pan. Smooth the top with a spatula.
  • Bake in the preheated oven for 60-65 minutes, or until the center is set and the edges are slightly puffed.

Cooling and Decorating

  • Allow the cheesecake to cool on a wire rack for about 10 minutes. Run a knife around the edge of the pan to loosen, then cool completely before removing the sides of the pan.
  • Once cool, frost the top generously with blue frosting, add large cookie eyes, and sprinkle additional chocolate sandwich cookies on top.
