Instructions

Preparation

  • Preheat your oven to 375°F (190°C) and grease an 8x8-inch baking dish.
  • In a large bowl, crack and whisk the 6 large eggs until well combined and frothy.
  • Stir in the cottage cheese until fully incorporated.
  • Add the shredded cheese, chopped spinach, diced bell pepper, chopped onion, garlic powder, onion powder, salt, and pepper. Mix well until evenly distributed.
  • Pour the mixture into the prepared baking dish, spreading it evenly.
  • Place the dish in the oven and bake for 35 to 40 minutes, or until set and golden on top.

Notes

Feel free to mix and match vegetables, add a pinch of red pepper flakes for heat, or try different cheese blends for variety. For added richness, substitute half of the cottage cheese for Greek yogurt.
