Instructions

Roasting the Tomatoes

  • Preheat your oven to 200°C (390°F). Toss the cherry tomatoes with olive oil and balsamic vinegar until well-coated. Spread them on a baking sheet and roast for 20 minutes until blistered.

Making the Flatbread Base

  • In a food processor, combine cottage cheese, egg, flour, baking powder, salt, and black pepper. Blend until smooth and creamy. Pour onto a parchment-lined tray, shaping into a round or oval.

Baking the Flatbread

  • Bake in the oven for 20 to 25 minutes until golden brown, with a firm but springy center.

Assembling the Flatbread

  • Once baked, let it cool for a few minutes. Top generously with torn burrata cheese, roasted cherry tomatoes, spoonfuls of pesto, and fresh basil leaves.
