For the Sweet Potatoes

For the Cowboy Caviar

  • 1 cup black beans, drained and rinsed Earthy and hearty, they bring protein and a satisfying texture.
  • 1 cup corn kernels Can be grilled, canned, or frozen for sweet bursts of flavor.
  • 1/2 red bell pepper, diced Juicy and vibrant, it offers a lovely color contrast.
  • 1/2 yellow bell pepper, diced Sweet and sunny, enhancing the freshness of the dish.
  • 1/2 small red onion, finely chopped Pungent yet mellowed by cooking, adding a touch of warmth.
  • 1 jalapeño, minced (optional) Providing a delightful kick, adjust to your heat preference.
  • 1 medium tomato, diced and seeded Juicy and tangy, binding all flavors together.
  • Juice of 1 lime Bright and zesty, cutting through the richness of the potatoes.
  • 2 tablespoons olive oil Another layer of richness, bringing everything together.

Instructions

Preparation

  • Preheat your oven to 200°C (400°F). Scrub the sweet potatoes clean and prick them with a fork to allow steam to escape.
  • Rub the sweet potatoes generously with olive oil and place them on a baking tray. Roast for 45–60 minutes, or until fork-tender.

Cowboy Caviar Preparation

  • In a large mixing bowl, combine black beans, corn, red and yellow bell peppers, red onion, jalapeño (if using), tomato, lime juice, additional olive oil, cilantro, salt, and pepper. Gently toss the ingredients together.
  • Chill the mixture in the refrigerator as the sweet potatoes finish roasting.

Assembly

  • Once the sweet potatoes are roasted, allow them to cool slightly before slicing them open lengthwise.
  • Fluff the flesh gently with a fork and add a generous pinch of salt.
  • Spoon the chilled cowboy caviar generously over each sweet potato.
  • Finish with a dollop of Greek yogurt or sour cream, and sprinkle with cilantro or add slices of avocado.

Notes

For even cooking, choose sweet potatoes that are similar in size. Preparing the cowboy caviar a few hours ahead enhances the overall flavor. Experiment with beans or include a splash of vinegar for uniqueness.
