Instructions

Preparation

  • Preheat oven to 375°F (190°C).
  • Slice each chicken breast horizontally to create a pocket.
  • Stuff each pocket with sautéed spinach, a few cranberries, and 1–2 slices of Brie.
  • Rub the outside of each chicken breast with olive oil and season liberally with salt, pepper, and garlic powder.

Cooking

  • Heat an oven-safe skillet over medium heat and sear the chicken breasts for 2–3 minutes per side until golden.
  • Drizzle the seared chicken with honey and transfer the skillet to the oven.
  • Bake for 20–25 minutes until fully cooked, reaching an internal temperature of 165°F (74°C).

Serving

  • Remove toothpicks, garnish with fresh rosemary, and serve warm.

Notes

Ensure your chicken breasts are pounded to an even thickness for even cooking. Don’t rush the searing process to achieve a golden crust.
