Instructions

Make the crust

  • Combine crushed graham crackers, melted butter, and sugar in a bowl until crumbs are well-coated. Press mixture into base and sides of a 23 cm pie dish. Chill in refrigerator for about 30 minutes.

Whip the filling

  • In a mixing bowl, beat softened cream cheese until smooth. Gradually add sweetened condensed milk, thawed lemonade concentrate, and lemon zest, mixing until creamy.

Fold in whipped cream

  • Whip heavy cream to stiff peaks in another bowl. Gently fold whipped cream into the lemony mixture to retain the airy texture.

Fill and chill

  • Pour the fluffy filling into the chilled crust, smoothing the top. Cover with plastic wrap and refrigerate for at least 4 hours or overnight.

Garnish and serve

  • Remove pie from refrigerator. Pipe extra whipped cream on top and add lemon slices or zest curls. Slice and serve cold.
