Instructions

Preparation

  • Preheat your oven to 450°F (230°C) and grease a baking dish.
  • Arrange the sliced onion rounds in a single layer within the prepared dish and drizzle generously with olive oil.
  • Sprinkle fresh thyme, along with salt and pepper to taste, over the onions.

Cooking

  • Roast the onions in the preheated oven for about 20 minutes until softened and starting to caramelize.
  • Meanwhile, heat the heavy cream in a saucepan over medium heat until it simmers, then stir in the Dijon mustard and half of the Asiago cheese until melted.
  • Once the onions have roasted, pour the cream sauce evenly over them and sprinkle the remaining Asiago cheese on top.
  • Cover the dish with foil and bake for another 20 minutes until tender and bubbling.

Notes

For an extra layer of flavor, consider adding a pinch of nutmeg to the cream mixture. You can also use different cheeses like Gruyère or Parmesan for a richer profile.
