  • 3 to 4 pounds ripe tomatoes, cut into wedges
  • 2 whole garlic bulbs, tops sliced off

  • 2 cups vegetable stock
  • 4 tablespoons tomato paste

  • 1/2 teaspoon dried parsley
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 teaspoon salt (adjust to taste)
  • 1/2 teaspoon black pepper

Oils

  • 3 tablespoons olive oil (for roasting)
  • 1 tablespoon olive oil (for sautéing)

Instructions

Preparation

  • Preheat your oven to 400°F (200°C). Spread ripe tomatoes and garlic bulbs on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for 30 to 35 minutes until caramelized.
  • Let them cool slightly and squeeze out the roasted garlic cloves.
  • In a large pot, heat 1 tablespoon of olive oil over medium heat. Sauté the chopped onion for 1 to 2 minutes until soft and fragrant.

Blending

  • In a blender, combine the roasted tomatoes, roasted garlic, sautéed onions, tomato paste, and vegetable stock. Blend until smooth.

Cooking

  • Pour the blended mixture back into the pot. Stir in the heavy cream, smoked paprika, dried herbs, red pepper flakes (if using), salt, and black pepper. Bring to a boil, then reduce the heat and let it simmer for about 5 to 6 minutes.

Serving

  • Ladle the soup into bowls, topping with fresh basil and a drizzle of olive oil. Serve hot alongside a grilled cheese sandwich or with crusty bread.

Notes

For added flavor, use fresh herbs over dried, roast the tomatoes and garlic until charred, and try lighter cream alternatives. For a chunkier soup, reserve some roasted tomatoes before blending.
