  • 4 pieces salmon fillets (about 1 lb total, skin-on) Juicy and rich in Omega-3 fatty acids.
  • 1 tbsp olive oil Adds fruity note and helps achieve a lovely sear.
  • 1 tbsp butter Provides rich flavor and creaminess.
  • 1/2 cup roasted red peppers, diced Sweet and smoky.
  • 3 cups baby spinach Offers freshness and nutrients.
  • 2 cloves garlic, finely diced Enhances flavor profile.
  • 3/4 cup half & half or heavy cream Creates a velvety sauce.
  • 1/3 cup grated Parmesan Adds depth and creaminess.
  • 1 tbsp fresh parsley, chopped For herbal brightness.
  • 1/4 tsp red pepper flakes (optional) Adds mild kick.
  • 1/2 tsp salt Balances flavor.
  • 1/4 tsp black pepper Adds warmth and depth.

Instructions

Cooking the Salmon

  • Season the salmon fillets with salt and black pepper.
  • Heat the olive oil in a large skillet over medium heat and place the salmon skin-side up.
  • Sear for about 5 minutes until a golden crust forms.
  • Gently flip the salmon and cook until it’s done to your liking.
  • Remove the fillets from the pan and set them aside.

Making the Sauce

  • Melt butter in the same pan.
  • Lower the heat a little, then add the finely diced garlic. Sauté for about 1 minute, allowing the garlic to become fragrant without burning.
  • Add in the diced roasted red peppers and sauté for another 2 minutes, letting the flavors meld.
  • Incorporate the baby spinach, stirring until it wilts and reduces in volume.
  • Reduce the heat to low. Pour in the half & half or heavy cream, then stir in the grated Parmesan, chopped parsley, red pepper flakes (if using), salt, and black pepper.
  • Mix until everything is well combined and the sauce is smooth and creamy.

Finishing the Dish

  • Return the salmon to the pan, gently placing the cooked fillets back and spooning the sauce over the top.
  • Allow everything to heat through for a minute or two.

Notes

For best results, choose skin-on salmon fillets which retain better moisture. Customize with other vegetables or cheese as desired.
