Instructions

Preparation

  • In a mixing bowl, combine all-purpose flour and salt.
  • Cut in cold unsalted butter until mixture resembles coarse crumbs.
  • Gradually add ice water, mixing just until a dough forms.
  • Shape the dough into a disk, wrap it in plastic wrap, and chill in the refrigerator for 30 minutes.

Crust Baking

  • Roll out the dough into a circle and fit it into a 9-inch tart or pie pan.
  • Prick the base with a fork, line with parchment paper, and fill with weights.
  • Bake in preheated oven at 375°F (190°C) for 15 minutes.
  • Remove weights and parchment, bake for an additional 5 minutes until lightly golden.

Filling Preparation

  • Heat olive oil in a skillet over medium heat.
  • Add onion and sauté until softened, about 5 minutes.
  • Add fresh spinach to the skillet and cook until wilted, about 2-3 minutes.
  • Remove from heat and let cool slightly.
  • In a mixing bowl, whisk together eggs, heavy cream, and milk.

Quiche Assembly

  • Pour the spinach and cheese filling into the pre-baked crust and smooth the top.
