Ingredients

For the whipped feta

  • 5 oz feta cheese The star of the show, its crumbly texture and salty flavor.
  • 3.5 oz Greek yogurt Adds tangy brightness to the feta, enhancing overall richness.
  • 1/4 none lemon juice Adds a zesty note to brighten flavors.
  • 1/2 tbsp olive oil Brings a smooth mouthfeel and depth to the dish.

For the marinated beets

  • 2-3 small beets Sweet and earthy vegetables that become pink when roasted.
  • 1 tbsp apple cider vinegar Adds a tangy depth to the beets.
  • 1/2 tbsp date syrup Natural sweetener that complements the beets.

For topping

  • handful chopped roasted pistachios Provides a crunchy contrast.
  • fresh dill to taste chopped Adds a fresh note.

Instructions

Preparation

  • Boil the halved beets in a pot of salted water for about 20 minutes until tender. Once cooked, peel the skins off and slice them into thin rounds.
  • In a blender or food processor, combine feta cheese, Greek yogurt, and lemon juice. Blend until the mixture is smooth and creamy.
  • In a separate bowl, whisk together the apple cider vinegar, date syrup, and olive oil to create the marinade.
  • Toss the sliced beets in the marinade and let them sit for about 5 minutes.

Assembly

  • Spread the creamy feta mixture generously on a serving plate.
  • Artfully arrange the marinated beet slices on top of the feta, followed by the chopped pistachios and a sprinkle of fresh dill.
  • Drizzle a bit of olive oil over the entire dish and season with sea salt and freshly cracked black pepper to taste.

Notes

To save time, consider using pre-cooked beets. For a chunkier dip, pulse the feta mixture less. Prepare the whipped feta a day in advance for deeper flavor, but wait to add toppings until serving.
