Ingredients

For the crust

  • 1 packet tennis biscuits or graham crackers, crushed For a gluten-free option, substitute with gluten-free alternatives.
  • 1/2 cup melted butter Helps to bind the crushed biscuits.

For the filling

  • 1 cup Cremora (coffee creamer powder)
  • 1/2 cup cold water To mix with Cremora for the filling.
  • 1 cup plain or vanilla yogurt Ensure it's not overly sweet.
  • 1 tin (397g) sweetened condensed milk Essential for the tart's sweetness.
  • 1/2 cup freshly squeezed lemon juice
  • 1 lemon Zest of 1 lemon (optional) Adds extra flavor.

Instructions

Preparation of the crust

  • In a mixing bowl, combine the crushed biscuits and melted butter. Mix until the crumbs are thoroughly coated.
  • Press this crumb mixture firmly into the bottom of a square or round glass dish to form a solid crust.
  • Chill it in the refrigerator for about 10 minutes.

Preparation of the filling

  • In another medium-sized bowl, stir the Cremora and cold water together until smooth.
  • Allow it to sit for about 5 minutes to thicken slightly.
  • Add the yogurt and sweetened condensed milk to the Cremora mixture and whisk until silky smooth.
  • Slowly incorporate the lemon juice and zest to thicken further.

Assemble the tart

  • Pour the creamy mixture over the chilled crust, smoothing the top with a spatula.
  • Consider adding a layer of crushed biscuits in between or on top of the creamy layer for a delightful crunch.

Chill and serve

  • Cover the dish and refrigerate for at least 4 hours, preferably overnight.
  • Slice and serve directly from the fridge.

Notes

For added flavor, consider adding a splash of vanilla extract to the filling. Garnish with fresh berries or mint leaves for color.
