Instructions

Preparation

  • In a large bowl, combine crumbled feta, Greek yogurt (if using), dried oregano, and black pepper. Mix gently with a fork.
  • Preheat the oven to 375°F (190°C). Lay a sheet of phyllo dough on a clean surface and lightly brush it with melted butter or olive oil.

Rolling

  • Place a generous spoonful of the feta mixture at one end of the phyllo sheet. Roll it tightly like a cigar, folding in the sides.
  • Repeat with remaining phyllo sheets and filling.

Baking

  • Arrange the rolls seam-side down on a parchment-lined baking sheet and brush the tops with more melted butter or oil.
  • Bake for 15-18 minutes or until golden brown and crispy.

Making the Spicy Honey

  • While the rolls are baking, gently heat honey with red pepper flakes and lemon juice for 2-3 minutes. Remove and let infuse.

Serving

  • Drizzle warm spicy honey over baked phyllo rolls and sprinkle with toasted sesame seeds and fresh herbs.
