Ingredients

For the batter

  • 1 cup all-purpose flour Forms the base for an incredibly crispy batter.
  • 3/4 cup cold beer Use a light lager or pale ale for the perfect texture.
  • 1 tsp baking powder Adds lift and lightness to the batter.
  • 1/2 tsp salt Essential for seasoning and enhancing flavor.
  • to taste optional spices (paprika, garlic powder, black pepper) Elevate your dish with these optional additions.

For the fish

  • 4 pieces fillets of cod or haddock (patted dry) Firm white fish ideal for frying.
  • as needed vegetable oil For frying; delivers a glorious golden finish.

Instructions

Preparation

  • Begin by heating vegetable oil in a deep pan or fryer to a steady 350°F (175°C).
  • In a mixing bowl, whisk together the flour, baking powder, salt, and any optional spices.
  • Gradually add the cold beer to the dry mix while whisking continuously until smooth and slightly thick. Allow the batter to rest for about 10 minutes.
  • Lightly coat each piece of fish in a bit of plain flour to help the batter adhere better.

Cooking

  • Dip the fish fillets into your prepared batter, ensuring full and even coating.
  • Carefully lower each battered fillet into the hot oil and fry for about 5–7 minutes, turning them once, until golden brown and crispy.
  • Once cooked, drain the fish on a wire rack or paper towels to remove excess oil.
  • Serve the Crispy Fish hot, paired with tartar sauce and a wedge of lemon.

Notes

Tips: Always use cold beer for a light batter. Allow the batter to rest for the best texture. Fry in small batches to maintain oil temperature.
