For the Fried Chicken

Instructions

Prepare the Biscuits

  • Preheat your oven to 425°F (220°C). In a large bowl, whisk together flour, baking powder, baking soda, and salt.
  • Cut in the cold cubed butter until the mixture resembles coarse crumbs.
  • Pour in the cold buttermilk and honey, then stir until a soft, slightly tacky dough forms.
  • Roll out the dough on a floured surface and cut into biscuits, placing them on a baking sheet.
  • Bake for 12–15 minutes until golden and puffed.

Marinate the Chicken

  • In a bowl, combine chicken with buttermilk and hot sauce. Allow to marinate for at least 30 minutes.
  • While the chicken marinates, whisk together flour, cornstarch, and spices in a separate bowl.
  • After marination, dredge each piece in the flour mixture.

Fry the Chicken

  • Heat vegetable oil in a deep skillet to around 350°F (175°C).
  • Add the chicken pieces and fry for 4–5 minutes per side until golden brown and crispy.
  • Let the chicken drain on a wire rack.

Make the Honey Butter

  • In a bowl, whisk together melted butter, honey, cayenne pepper, smoked paprika, and salt.

Assemble and Serve

  • Split open the warm biscuits and stuff them with crispy fried chicken.
  • Drizzle the spicy honey butter over the top and serve immediately.
