Wrapper Ingredients

  • 6-8 sheets rice paper Delicate sheets that transform into crispy parcels.

Instructions

Preparation

  • In a medium-sized bowl, combine the whipped feta, finely chopped pistachios, fresh mint, lemon zest, and a sprinkle of black pepper. Mix until creamy and well combined.
  • Fill a shallow dish with warm water. Dip each rice paper sheet for about 5–10 seconds until it softens but remains firm. Lay it out flat on a dry surface.

Filling and Rolling

  • Spoon approximately 1.5 tablespoons of the creamy filling onto the center of the rice paper sheet. Fold the sides in, and roll tightly from the bottom up to enclose the filling. Repeat with remaining sheets.

Cooking

  • Preheat your air fryer to 200°C (392°F). Arrange filled parcels in the fryer basket and cook for 6–8 minutes until golden and crispy. Alternatively, pan-fry in a hot skillet with olive oil until crispy on both sides.
  • Serve warm, alongside lemon wedges for a zesty squeeze, hot honey for sweetness, or a yogurt-herb dip.

Notes

Ensure rice paper sheets are softened adequately but not overly soggy to avoid tearing. Leftovers can be stored in an airtight container for up to two days.
