Ingredients

Filling Ingredients

  • 150 g feta cheese Creamy and tangy, provides robust flavor.
  • 50 g cream cheese Smooth and rich, adds velvety texture.
  • 2 tbsp Greek yogurt Lightens the filling and enhances freshness.
  • 40 g shelled roasted pistachios, finely chopped Earthy and nutty, adds crunch.
  • 1/2 unit lemon (zest) Bright citrus notes add aromatic brightness.
  • 1/2 tsp honey (optional) Adds a hint of sweetness; omit for savory.
  • freshly ground black pepper Enhances all flavors.

Assembly Ingredients

  • 8-10 sheets rice paper Light and crisp, perfect for wrapping.
  • warm water For soaking rice paper.
  • olive oil spray or neutral oil For brushing to achieve golden color.

Garnish

  • extra crushed pistachios For garnish.
  • mint leaves For garnish.
  • chili flakes or za’atar Optional garnish for spice.

Instructions

Make the Filling

  • Blend feta cheese, cream cheese, Greek yogurt, lemon zest, and black pepper in a food processor until smooth.
  • Add honey if desired and blend again.
  • Stir in chopped pistachios and chill briefly.

Soften the Rice Paper

  • Dip one rice paper sheet in warm water for 5-10 seconds until soft.

Assemble the Triangles

  • Lay the softened rice paper on a clean surface and add a spoonful of filling near one edge. Fold over to form a triangle, sealing tightly.

Repeat & Air Fry

  • Preheat air fryer to 200°C (390°F). Brush assembled samosas with olive oil and air fry for 6-8 minutes, flipping halfway through.

Serve & Garnish

  • Transfer cooked samosas to a platter. Garnish with crushed pistachios, mint leaves, and optional chili flakes or za’atar.

Notes

Keep rice paper sheets covered with a damp cloth while assembling. Adjust filling and garnishes to your taste.
