  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp smoked paprika
  • Salt and black pepper, to taste
  • 1/3 cup grated Parmesan cheese (optional)
  • Fresh chopped parsley, for garnish
  • Your favorite dipping sauce (ranch, sriracha mayo, or chipotle aioli)

Instructions

Preparation

  • Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • In a large bowl, combine the cauliflower florets with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Toss until each piece is evenly coated.
  • Optionally sprinkle in the Parmesan cheese and toss again to incorporate.
  • Arrange the florets in a single layer on the prepared baking sheet, leaving space between each piece.

Cooking

  • Roast the cauliflower for 25–30 minutes, flipping halfway through, until golden brown and crispy.
  • Transfer to a serving plate, garnish with fresh parsley, and serve immediately with your choice of dipping sauce.

Notes

For enhanced flavor, marinate the cauliflower in olive oil and spices for at least 30 minutes before roasting. Don't overcrowd the baking sheet to ensure a crunchier outcome. For extra crunch, consider tossing in panko breadcrumbs before roasting. Leftovers can be stored in an airtight container for up to three days.
