Ingredients

Fritter Base

Cooking

Instructions

Prepare the Filling

  • Heat olive oil in a pan over medium heat, add minced garlic and sauté until fragrant.
  • Add finely chopped spinach and sauté for 2-3 minutes until it wilts.
  • Remove from heat and mix in feta, ricotta, dill, lemon zest, nutmeg, salt, and pepper. Allow to cool.

Make the Dough

  • In a bowl, whisk together cornmeal, flour, baking powder, salt, black pepper, oregano, and smoked paprika.
  • In another bowl, mix egg, buttermilk, and melted butter, then combine with dry ingredients until a thick dough forms.

Assemble the Fritters

  • Take about 2 tablespoons of dough, flatten it, place a tablespoon of filling in the center, cover with more dough, and seal edges.
  • Repeat until all fritters are assembled.

Fry Until Golden & Crispy

  • Heat vegetable oil in a pan over medium heat. Fry fritters for 2-3 minutes on each side until golden brown.
  • Transfer to a plate lined with paper towels to drain.

  • Serve warm with yogurt or tzatziki, garnish with crumbled feta and fresh herbs.
