Ingredients

For the Sweet Potato Balls

For the Whipped Feta Dip

  • 200 g feta cheese, crumbled Rich and tangy.
  • 3 tbsp Greek yogurt Enhances the creaminess.
  • 1 tbsp olive oil Adds a fresh flavor.
  • Zest of 1 lemon Brightens up the dip.

Instructions

Preparation

  • In a mixing bowl, combine mashed roasted sweet potato, Parmesan, egg, smoked paprika, garlic powder, salt, black pepper, and panko breadcrumbs. Stir until the mixture is just firm enough to form balls.
  • Cover the mixing bowl and place it in the refrigerator for about 15 minutes.
  • While the sweet potato mixture chills, blend feta cheese, Greek yogurt, olive oil, and lemon zest in a food processor until ultra-smooth. Season with black pepper to taste, then set aside.
  • Once chilled, roll sweet potato mixture into small balls (about 1 inch in diameter) and coat each ball lightly in extra panko breadcrumbs.

Cooking

  • In a deep skillet, heat neutral oil over medium heat until it shimmers.
  • Carefully add sweet potato balls to hot oil in batches. Fry for 3 to 4 minutes or until deeply golden and crispy.
  • Transfer the fried balls to a plate lined with paper towels to drain excess oil.

Serving

  • Spread a generous swoosh of whipped feta on a serving plate. Top with crispy sweet potato balls, drizzle with runny honey, sprinkle with toasted panko, and garnish with microgreens or fresh thyme.

Notes

Enhance the flavor with freshly chopped herbs or smoked salt. For a healthier option, bake the sweet potato balls at 400°F for 20 minutes.
