Preparation

  • Begin by dicing your onion, mincing the garlic, and prepping the chicken.

Cooking

  • Add your chicken breasts, chicken broth, diced tomatoes, onion, garlic, Italian seasoning, salt, and pepper into the crock pot. Stir to combine.
  • Cover the crock pot and set it to cook on low for 6-7 hours or on high for 3-4 hours.
  • Once cooking time is up, remove the chicken breasts from the crock pot and shred them.
  • Return the shredded chicken back into the pot, then add the heavy cream and Parmesan cheese, stirring to combine.
  • Allow the mixture to cook for an additional 20-30 minutes.
  • Ladle the soup into bowls and garnish with additional Parmesan cheese and fresh basil.
